Dairy Whitener And Its Uses

Dairy Whitener

Dairy whitener is dried milk with added sugars. We can use it to make tea or coffee with or without adding additional sugar. It is becoming quite popular nowadays to not just prepare tea and coffee, but also to prepare baked desserts, puddings and even traditional Indian sweets.

Dairy whitener’s ability to offer a stable emulsion and its whitening ability makes it ideal for its varied uses. Whenever you are out of fresh or packaged milk but wish to make sweet milk based recipes, dairy whitener can come to your rescue. You can make simple and interesting recipes that everyone will enjoy.

You can prepare kalakand by mixing dairy whitener, paneer and fresh cream. Add sugar and cardamom powder to enhance flavour and aroma. Put all ingredients in a pan and cook for 12-15 minutes and let the mixture thicken. You have to keep stirring while it is being cooked. Once the mixture has turned into a thick paste, transfer it to a greased plate and spread evenly. Garnish it with dry fruit slivers and allow it to rest for 4-5 hours, cut into pieces and serve.

To prepare delicious gulab jamuns, make a soft dough with khoya, plain flour and dairy whitener using small amounts of water. Divide the dough into small smooth balls and fry them in ghee till they are golden brown. Prepare sugar syrup and soak the balls in it on a low flame for about 6 minutes to enjoy home-made gulab jamuns.

Dairy whitener can also be used in most baking recipes that require milk. While preparing batter, mix the whitener directly into the other dried ingredients that are mentioned in the recipe, like the flour and baking powder mixture. After that you can add the required water quantity (as suggested in instructions mentioned on the dairy whitener pack) in the recipe step where it suggests that liquid milk should be added.

Dairy whitener dissolves smoothly and it has a long shelf life. All these features make it very useful in a modern kitchen.
